Serum was obtained from 25 patients with active rheumatoid arthritis (RA) and 20 healthy controls (N) at 0, 24, 48, and 72 hours after the initiation of a diet low in nitrate and nitrite. Serum NOx concentrations were higher in the RA group than in the control group at 0, 24, 48, and 72 hours (p = 0.028, 0.0004, 0.046, and 0.053, respectively).
